My new Favorite ethnic vegan cookbook
Easy to follow recipes by authentic Hispanic who is apt communicator. Authors style is positive professional, and welcoming, without the usual vegan activism pushing at you while cooking. I've tried multiple recipes out of this book and though they haven't been off the chart mind blowing in flavor they score because 1) mexican classics often filled with lard or meat and this book is all vegan but celebrates vegetables vs just remaking dishes by replacing protein 2) author makes Mexican food approachable by using ingredients found in my local grocery 3) gives me recipes that I can actually get on the table within an hour.

Awesome cookbook for anyone who loves Mexican food!
YUM! My husband and I made the Spinach & Mushroom Enchiladas Verdes from this cookbook tonight, and they were amazing! Freshly-fried tortillas stuffed with cumin-spiced mushrooms, onions, and spinach, topped with cashew crema, salsa verde, and pickled red onions. I was trying to mark the pages of the recipes I want to try, and I've almost marked them all! I definitely recommend this book to anyone who loves Mexican food. I think I'll make the nachos next!

Poorly indexed, lack of photos, and only partial recipe name translations
The table of contents only lists the sections, not recipes. The recipes are only enumerated at the start of each major section.The recipes are named using their original Spanish words (which is fine) but the author only provides translations for a handful of titles, and leaves you guessing for the others.The book contains very few photos despite having plenty of unused white-space around each recipe. For those who didn't grow up in a Spanish household, photos would provide an immediate impression of what kind of dish the recipe will produce.

Amazing!
So far I have made the conchas, and tofu huevos and chorizo breakfast tacos. Both were easy to make and delicious. I can't wait to make more recipes!

Tasty recipes!
So many great ideas, easy to follow. Authentic Mexican flavor. I learned to make corn tortillas that taste so good I rarely ever buy store-bought any more.

Vegan Mexican at its greatest!
We have already begun using this fine Mexican cookbook. I tried my hand at making Seitan, meat substitute, and it was a success! The authors detail is on point and easy to follow for the most part. Next, I'm trying the "chorizo", can't wait!

Great recipes, would like more photos!
I love mexican food but I live in the UK so don't really know the names of it all - I would have preferred a lot more photos of the dishes because I don't instantly know what 'tamales' are or anything other than tortillas, enchilladas, tacos, and beans! However, the recipes that I have made so far are delicious. I can't wait to make all these dishes.
