I no longer recommend this product
***********UPDATED REVIEW*****************They have changed the formula of this product. It is no longer pure raw hing with only a minimum amount of lentil flour to avoid clumping. It is now standard asafoetida compound, which is about 50% flour. The potency is markedly diminished and it is the same as the product you can get in your local Indian market for $1.99. I no longer recommend this product.See my attached photo comparing the old and new versions of this product to see for yourself!PREVIOUS REVIEW:The jar says "made with organic compound." Examining the product under the microscope reveals translucent golden granules consistent with the appearance of dried granulated hing. Small opaque brown flecks consistent with the appearance of powdered lentil are present, suggesting black gram (lentil) is present. Wheat flour does not appear to be present. The powder cakes in the jar, suggesting that no other anti-caking agent has been used. I have not done a chemical analysis, only a physical assessment of this product. It is possible that wheat may be present in tiny quantities I did not detect, but the product appears to be gluten-free. While not stated explicitly on the label, it is absolutely clear that this product is different from regular asafoetida which contains wheat flour as an anti-caking agent and to make the product easier to use due to the pungency of hing.This product is MUCH more concentrated that traditional asafoetida powder, and MUCH less should be used. I use only a few granules at a time to flavor a meal. You will use so little of this product in meal preparation that even if you have celiac disease (true gluten intolerance), any wheat gluten present will be insufficient to trigger an attack. If you are just trying to avoid gluten in your diet, this product is fine.

Smells terrible and not sure if allergic reaction
Bought this for the boyfriend as an onion/garlic replacement for IBS.... we used less about a pinch of it in cooking... and it tasted a bit better than it smelled... but still an acquired taste... generally smelled atrocious and the smell bled through the container (this is nothing about the actual packaging... but it's a wonder that the smell is so potent.) ... I'm sure it's a quality powder and/or food condiment... but not knowing how to properly cook with it made this another useless item store in the pantry.

For Indian Recipes, But with Other Health Perks Too!
I got this as a replacement for garlic (a friend's allergic to garlic)- it's often used in Indian recipes. Just a dash needed! I add it after sauteing stuff, adding a splash of liquid as well, to dispel the flavor. But it's got other potential benefits: a mild stimulant for mental focus; it might be a helpful digestant, addressing irritable bowel syndrome (IBS), possibly improving blood levels of cholesterol and triglycerides too. At one point, I noted that some form of this stuff was added to special (& very expensive) face creams, as it's been known to soften skin (callouses, etc.). I haven't figured out how to work it into my face cream though!

Good onion flavor substitute
Recently switched to low-FODMAP eating and decided to try this spice as I've been a life-long onion lover. The smell is semi- off-putting but the tiniest bit in a couple dishes I've tried does enhance the dish well. Seems like it will last a long time since you don't need very much to get flavor!

A bit concerned... as the product just ...
A bit concerned... as the product just arrived and the label on my bottle looks really old. I hope the product isn't! I haven't tried it yet! Also, it doesn't say "certified" organic on it, so I hope it is!

Great replacement for garlic and onion
Hing is a great alternative to garlic and onion usually FODMAP foods that can irritate and bloat people. It really tastes like a combo of both and a little goes along way. It's very great spice that has a plethora of benefits in Ayurveda.If you search your dosha type / body type and see if this can help you. It helps with releasing the "heat" or pitta I believe and after Meals a teaspoon usually helps digest my food.Even in cooking and adding jt to lentils and daal or curries gives it a beautiful taste

Good product. Description Misleading
Fast service! Product NOT 100% asafoetida. 48% gram flour, 100%gum, 2%mustard oil stated on the label. It is a good product but the description is misleading.

Hing without Gluten
I had no idea that the regular brands of asafoetida had gluten in them! I have celiacs so consuming unknown sources of gluten is very serious. We cook south Indian vegetarian food 90% of the time. Hing is used in small quantities in most recipes. It has a unique flavor and is really obvious if it is missing. So happy to be back on track. It is a bit stronger than other mixes. 40% instead of the more common 30%. I will adjust my use but otherwise is the perfect product.
